How to make simple and delicious creamy vegetable sup.
- 4 Tbsp Butter
- 1 Small Onion
- 1 Stalk Celery
- 1 Carrot
- 1 Russet Potato
- 1/2 Cup Cheddar Cheese
- 3 Cups Vegetable Broth
- 3 Crowns of Broccoli (6 to 8 cups)
- 3 Tbsp Flower
- 2 Cups Milk
- Nutmeg, Salt, & Pepper
Melt 2 tablespoons of butter. Sauté diced onion & celery in the butter. Add diced carrot, pealed & diced potato, and chopped broccoli. Add vegetable broth and simmer for 12 to 15 minutes. While the veggies are simmering make a roux. Start by melting the remaining 2 tablespoons of butter. Then add 3 tbsp of flower and 2 cups of milk. Heat the roux until thick and creamy.
Add cheddar cheese to the vegetable broth and stir until melted. Next puree the mixture in a blender until smooth.
Add the roux to the vegetable puree and heat gently while adding nutmeg, salt, and pepper to taste. Enjoy!
